Sugarcane is planted widely in the Island of Panay. Muscovado processing is a traditional sugarcane-based industry that is focused in the Province of Antique.
Muscovado is locally mainly for confectioneries. Among its major uses are for making "bokayo", peanut brittle, popped rice, sweet banana chips, sweetened pili, coco honey and breadfruit candies.
Powdered muscovado, on the other hand, has penetrated fine restaurants, coffeee shops, hotels and is preferred by health-conscious people.
Muscovado processing is becoming a sunrise industry in the Philippines and in some parts of the world like Europe, Japan, and the USA. At present, it is indirectly exported to Japan by traders from Manila(Source OTOP, DTI-Philippines).
